The story
Talla is the traditional hearth ale brewed almost exclusively by women across the Amhara and Tigray highlands of Ethiopia, anchoring village life, labor-sharing debos, and saint day feasts. Brewing talla is an intricate multi-stage process involving bikil (germinated barley malt), tinsis (a bitter, fermented starter mash), and asharo (heavily roasted, caramelized grain that lends dark color and a characteristic smoky malt aroma). The fermentation relies on traditional earthenware pots (insera) thoroughly smoked over aromatic wood chips such as olive wood or kosso to sanitize the vessel and infuse deep woodsmoke undertones into the brew.
