The story

Hailing from the fertile southern farmlands around Kanye and Lobatse, thopi is a beloved post-harvest dessert traditionally prepared when indigenous lekatane (citron melons) or sweet pumpkins ripen in late autumn. Eaten warm by hearth fires during cold winter evenings, it serves as a comforting, sweet reward for families after communal harvesting duties. The defining culinary technique involves using a traditional carved wooden whisk (lehetho) to vigorously beat pumpkin fibres directly into steaming cornmeal slurry to create a pillowy texture.
