The story
Hailing from the misty Eastern Highlands of Manicaland, this preparation honors the agricultural heritage of the Manyika and Ndau peoples who farm mountain slopes rich in indigenous tubers. Madhumbe (taro) and wild tsunga (mustard greens) are traditionally prepared together during the late rainy season harvest to create a deeply sustaining accompaniment to sadza rezviyo (finger millet porridge). An essential technical secret among highland cooks is the measured use of a pinch of wood ash water or alkaline soda, which neutralizes the acrid sharpness of old tsunga leaves while preventing the mucilage in the taro from turning slimy.
