The story

Across Sierra Leone, particularly among urban Krio, Temne, and Mende households, wonjo is the quintessential non-alcoholic welcome drink served at christenings, beach excursions, and roadside stalls in plastic bags. Derived from the fleshy calyces of the Roselle plant, this drink carries deep West African roots that later traveled across the Atlantic to become Jamaican sorrel. A vital technical element that experienced Sierra Leonean cooks master is steeping the calyces off the boil rather than boiling them aggressively, preserving the bright vitamin C acidity and floral delphinidin pigments without extracting muddy tannins.
