The story

Widely cherished across Amhara and Oromia, Genfo is famously prepared to nourish postpartum mothers and celebrate infant baptisms due to its rich, fortifying density. It is traditionally sculpted into an elevated mound with an indentation at the crown to hold an unctuous reservoir of spiced fat and chili. Historically, the porridge is pounded continuously using a curved wooden ladle called a 'mokebiya' against heavy clay or iron pots to eliminate starches from clumping without adding excess moisture.
