The story

Hulbat Marakh is a cornerstone of the historic walled city of Harar in eastern Ethiopia, deeply cherished by the Harari (Geyusu) community. It is traditionally prepared as a nourishing centerpiece to break the daily fast during Ramadan and for women during postpartum recovery. A key technical subtlety lies in adding the whipped fenugreek paste (hulbat) at the very end off the heat, preventing the delicate emulsion from breaking and souring into extreme bitterness.
