The story
In Central and Western Uganda, Katogo emerged originally as a humble breakfast among working communities before rising to ubiquitous culinary prestige across morning diners. Traditionally cooked in a clay pot, the dish unites peeled green cooking bananas (matooke) with slow-stewed beef offal (ebyenda), allowing rich animal fats to break down the firm plantain starches. Historically, the word katogo refers to a mishmash or mixture, symbolizing the communal pot where varied morning cuts were stretched to feed entire households.
