Mandazi (Cardamom-Flavored Triangular Fried Dough)
Pillowy, golden triangular fried pastries infused with aromatic cardamom and rich coconut cream.
The story
Deeply woven into urban Ugandan breakfast culture from Swahili coastal trade routes, Mandazi is an indispensable morning staple sold at roadside stalls and neighborhood tea rooms across Kampala and Jinja. Distinct from overly sweet western doughnuts, traditional East African mandazi are subtly sweetened, enriched with rich coconut milk, and heavily scented with freshly crushed green cardamom pods. They are fried to a deep amber shell with a light, bread-like interior, traditionally paired with spiced African milk tea (chai).
