The story
Rooted deeply in the lakeside communities of Northern Malawi along the shores of Nkhata Bay and Karonga, Kondowole is the pride staple of the Tumbuka and Tonga peoples, eaten daily alongside fresh Chambo fish or Usipa broth. Unlike the crumbly texture of maize nsima, Kondowole is distinctively gelatinous, stretchy, and smooth, requiring formidable physical strength to stir as it thickens. Culinary historians note that its production depends upon processed, fermented cassava starch that undergoes intense mechanical shearing over sustained heat to achieve its signature translucent elasticity.
