The story

Along the golden shores of Lake Malawi, particularly within Tonga and Yao fishing settlements from Nkhata Bay to Mangochi, usipa is the lifeblood of coastal cuisine. Harvested on moonless nights using paraffin lanterns, these delicate freshwater sardines (Engraulicypris sardella) are dried on elevated reed mats under the blazing sun within hours of capture. When rehydrated and crisped in hot oil, their tiny, calcium-rich bones soften entirely, imparting an intensely savoury umami depth that anchors the family meal.
