Kwacoco Bible (Grated Cocoyam and Smoked Fish Parcel)
Steamed plantain leaf parcels layering silky grated red cocoyam, spinach greens, and rich smoked bonga fish in palm oil.
The story
Kwacoco Bible is a revered ceremonial dish of the Bakweri people who farm the rich volcanic slopes of Mount Cameroon in the Southwest Region. It is served as a symbol of unity and plenty during traditional weddings, cultural festivals, and chieftaincy councils. The moniker 'Bible' reflects the meticulous internal arrangement of the parcel: when unswaddled and sliced, the alternating layers of starchy dough, smoked fish, and bitter greens open like leaves of a leather-bound book.
