The story
Originating among the Lozi and Subiya fisherfolk of the Zambezi Region in northeastern Namibia, Litapi Zokusika celebrates the abundance of the river floodplains. Sun-drying split tilapia or river bream preserves seasonal catches across the dry winter months, concentrating intensely savory umami flavors. Traditionally simmered in heavy three-legged cast-iron potjies over wood embers, the dried fish softens into tender, smoky flakes while seasoning the thick tomato gravy.
