The story
Mutete is a quintessential green vegetable relish prepared by the Kavango and Caprivi communities along northern Namibia's major river valleys. Served at midday family meals with thick pearl millet porridge (oshifima) or white maize pap, it balances heavy starches with intense natural acidity. Traditionally, dried hibiscus leaves (Hibiscus sabdariffa) are first parboiled with wood ash or baking soda to soften the tough fibrous leaves and temper their sharp oxalic bite.
