Ondjove (Roasted Marula Kernel Oil)
A precious, aromatic golden elixir hand-pressed from fire-roasted marula fruit kernels, revered as northern Namibia's ultimate dipping delicacy.
The story
Ondjove is the crowning culinary jewel of the Owambo people, historically reserved for royal feasts, honored guests, and significant cultural milestones like the Oshituthi shOmagongo (Marula Festival). Producing pure ondjove is an exacting, labor-intensive craft: wild marula nuts (eenyandi) are individually decorticated using modified animal horn tools, roasted over wood embers, and ground in an oshini (wooden mortar). The warm paste is meticulously hand-kneaded with drops of boiled water, which chemically breaks the oil-protein emulsion and causes liquid gold to seep through the artisan's fingers.
