The story

Sambusa is beloved across urban Ethiopia, served by street corner fryers and home cooks during religious celebrations and fast-breaking meals. While meat versions appear during feast days, the spiced brown lentil (misir) variation is revered during Orthodox Christian fasting periods (Tsom) and Islamic holidays alike. Ethiopian sambusa wrappers are rolled paper-thin and folded into precise equilateral triangles to ensure maximum crunch without soaking up excess frying oil.
