The story

Deeply rooted in the culinary traditions of the Gourmantché people of eastern Burkina Faso, Sauce Kapok is traditionally served over hot white corn tô during dry-season weddings and ancestral rites. The soup harnesses dried kapok calyces harvested from towering wild savanna trees before seasonal winds shatter them. Technically, dried kapok calyces release natural hydrocolloids that thicken braising liquids into a glossy, viscous emulsion when simmered gently with alkaline potassa.
